General Manager, Ando

Julien Gardin is a general manager with extensive experience in fine dining venues. He has worked and travelled across the world in a number of Michelin-starred restaurants, bringing with him a commitment to service excellence and a boundless drive to expand his skills and knowledge within the industry.

Julien’s love for fine dining service began during his studies in catering school. There, he was given the opportunity to spend a few months at Le Pre Catalan, a three Michelin star restaurant in Paris. This experience spurred a deep interest in fine dining, and in his final year of catering school Julien went on to represent France in the 2005 Wordskills’ Restaurant Service world championships.

Following his studies, Julien went on to work at several world-famous fine dining establishments, including: assistant manager at L’Hostellerie Jerome, southern France, under Bruno Cirino; assistant manager at The Fat Duck, under Heston Blumenthal; and restaurant manager at The Dorchester, London, under Alain Ducasse. He formerly managed The Tasting Room in Macau, working closely with executive chef Fabrice Vulin. Today he works under the award winning JIA group as the General Manager for Ando in Hong Kong.

Julien’s experience in these venues helped shape a hospitality philosophy defined by excellence, attention to detail, and an innovative approach to fine dining service.
